7 Healthy & Quick Family Recipes To Cook At Home

While the world continues to quarantine during the Covid-19 pandemic, there's only one thing to do - start cooking up some delicious food recipes to enjoy while social distancing!

There's nothing like a homemade meal that will offer comfort during these uncertain times. So, if you're isolating with family, why not cook up something comforting and be grateful for.

Healthy family dinners are so much easier to prepare if you have some inspiration every week, which is why we have rounded up 7 healthy dinner recipes that can be enjoyed by the entire family. Our round up includes healthy dinner ideas for kids too, so you’ve got plenty to choose from...

1. Shepherd's Pie

Shepherd’s Pie comes to us from England and is traditionally made with lamb or mutton. Here in England (and Australia and New Zealand) we would call the beef dish a “cottage pie” and the lamb dish “shepherd’s pie”. Regardless of what you call it, a shepherd’s pie is basically a casserole with a layer of cooked meat and vegetables, topped with mashed potatoes, and baked in the oven until the mashed potatoes are well browned. 2. Chicken Pasta Bake

We all know we can rely on pasta during this time - so why don’t you enjoy this gooey cheese and chicken pasta bake for the ultimate weekday family dinner. Serve straight from the dish with a dressed green salad... (my personal favourite!) For this recipe,  click here.

3. Simple Stir-Fry

You can not beat a stir fry for a fast, simple, and budget-friendly meal. What's great about it, is that you can easily add new ingredients, make a variety of sauces or try traditional stir-fry recipes like Kung Pao Chicken or Beef with Broccoli.

A great stir-fry is usually made up of three main components: beef, vegetables, and sauce. Start with 1 pound of protein and 2 pounds of vegetables for a simple stir-fry and add a simple stir-fry sauce.

5. Homemade Pizza with Veggie Faces!

Here's a recipe for toddlers to keep tiny bellies full and hands occupied. They can decorate and pack these pizzas themselves using some of their favourite vegetables and meats. Such a fun recipe to do when bored at home - yet can be messy (trust me!)

6. Easy Chicken Fajitas

Does your family love a simple, vibrant midweek meal? Place these simple chicken fajitas together and people can serve their own DIY masterpieces! I love adding some salsa and guacamole too!

7. Slow Cooker Chilli

Batch-cook the chilli and freeze when you're pressed for time for balanced dinners. Perhaps it will become a favourite family with secret vegetables to feed fussy eaters…or for a vegan option try the 3 ingredient vegan chilli

We hope you love these easy dinner recipes -  I know our family definitely does. Personally, I love to cook as it helps take my mind away from everything going on in the world right now. It also means we can sit down and eat as a family, while enjoying some quality time together. If you do try any of the recipes above, make sure to tag us at @matchstickmonkey!

Stay safe everyone.
